Why this site exists

Barbecue is full of confident roundups that begin “we tested twenty smokers” and quietly hope you never ask how. Meanwhile the actual questions that decide a cook — what temperature holds the pit at 250°F, how much fuel a fourteen-hour burn really needs, whether a cook chamber is big enough for a full packer — get buried under sponsored links and stock photos. Brisket & Barkexists to do the slower, honest version of that job: read the spec sheets, do the temperature and fuel math, and say which gear earns its place for a brisket cook — and which to skip.

Our whole editorial stance fits in one sentence: we tell you what we know, how we know it, and where we don’t know.When a manufacturer won’t publish a cook-chamber size or a temperature range, we print “Not published” rather than guessing. When a cheaper thermometer does the same job as a pricey one, we say so, even though the pricey one would pay us more. And we have never invented a review, a star rating, or a “we cooked forty briskets” claim — there are none anywhere on this site.

Who writes it

Brisket & Bark is written by Stephen V.. Stephen is a brisket enthusiast — genuinely into this — who reads the manuals, compiles the published specs and does the temperature and fuel math for fun. He is not a competition pitmaster and this is not a test lab. What he brings is honest homework: cook temperatures and timing sourced to real references, gear compared on the specs manufacturers actually publish, and a plain 'skip this' when a product doesn't hold up.

That is a deliberate limit, and we’d rather be straight about it than borrow authority we haven’t earned. Stephen is not a competition cook, and this is not a test kitchen or a lab. The honest version of our credentials is homework: cook temperatures and timing sourced to real references, gear compared on the numbers the makers themselves publish, and a plain “skip this” when a product doesn’t hold up.

The gear we haven’t tested — and we say so

Here is the line most sites blur, so we’ll state it flatly: we have not physically tested the smokers, thermometers, knives, wood, or butcher paper we write about. We haven’t run a single brisket through a controlled comparison, and we’re not going to pretend we did to sound more convincing. Everyone claims a lab; we don’t have one, and we refuse to fake one. What we do instead is compare each product on its published specification and reason from that in the open — a method you can check, and reproduce, without taking our word for anything.

Why the picks are still worth trusting

Trust here doesn’t come from a borrowed title — it comes from a method you can audit. We compile the specs a brisket cook actually turns on (cook-chamber size against the length of a packer, fuel type, temperature control and insulation, thermometer speed and accuracy, blade length, paper width), weight them for a long low-and-slow cook, and cite the cooking facts to references like USDA FSIS and recognized field authorities rather than to ourselves.
