Temperature control: real, but often overstated
Traeger’s controllers, particularly on its upper models, cycle the auger more finely and hold a tighter band around the set point. That is a genuine engineering advantage and it shows up in side-by-side logging.
Whether it matters for brisketis a separate question. Brisket is remarkably tolerant of temperature variation — a pit swinging between 240 and 265°F will produce brisket essentially indistinguishable from one held at a rigid 250°F, because the meat’s thermal mass smooths the variation out. Tight control matters far more for baking, or for holding a precise low smoke temperature. For a twelve-hour beef cook, both brands are comfortably good enough.
What matters more on either is that you do not trust the grill’s own reported temperature. Controller readings are taken at a probe location that may differ from grate level by a substantial margin. Use an independent leave-in probeat grate height — this is true of every pellet grill of every brand.
Capacity is where the real difference lives
This is the comparison that should drive most decisions. At a given price, Pit Boss typically offers meaningfully more grate area than Traeger. For brisket specifically that translates into practical terms: whether a full packer lies flat with room around it, whether you can run two briskets for a gathering, and whether you can fit a water pan alongside the meat.
A packer needs roughly 18 to 20 inches of usable grate length. Both brands have models that clear that, but you will reach it at a lower price point with Pit Boss. If your budget is fixed and capacity is the constraint, that is a straightforward argument.
What the Traeger premium actually buys
Being fair to the more expensive option: build consistency, a more mature app and firmware experience, better parts availability, a longer track record, and notably stronger resale value. That last one is worth real money — a used Traeger holds its price far better, which narrows the effective cost gap if you ever sell.
What the premium does notbuy is more smoke flavor. Both brands are constrained by the same physics of efficient pellet combustion. Anyone telling you that one brand’s brisket is smokier than the other’s is describing pellet choice, cook temperature or a smoke tube — not the grill.
The recommendation
If you are buying primarily to cook brisket and secondarily everything else, and the budget is the binding constraint, Pit Boss gives you more cooker for the money and the control gap will not cost you a brisket. If you want the more refined product, care about the app, or expect to resell, Traeger justifies its premium on those grounds rather than on cooking results.

Traeger has historically had the edge, particularly on its higher-end controllers, which cycle the auger more finely and hold a tighter band around the set point. Pit Boss controllers have improved considerably and are entirely adequate for brisket — you are holding one temperature for twelve hours, not chasing precision. Both swing more than a thermostatically controlled oven, which is normal for the category.
Do Traeger pellets work in a Pit Boss?
Yes, and vice versa. Any food-grade hardwood BBQ pellet of the standard 1/4-inch diameter works in any pellet grill regardless of brand — there is no proprietary format and no reason to buy brand-matched pellets beyond preference. The only thing you must never use is heating pellets sold for pellet stoves, which can contain softwoods, bark and binders that are not food-safe.
Which is better value?
Pit Boss, on a pure cooking-area-per-dollar basis, usually by a wide margin — you typically get noticeably more grate space at a given price point. Traeger's case is that you are paying for controller refinement, build consistency, app maturity and considerably stronger resale value. Whether that premium is worth it depends on how much you value those things.
Will either give me a real smoke ring on brisket?
Usually a modest one. Pellet grills burn very cleanly, and clean combustion produces fewer of the gases that create a smoke ring, so pellet brisket typically shows a fainter ring than charcoal or wood. Running low temperatures early in the cook helps. It is worth remembering that the smoke ring is purely cosmetic — it has no effect on flavor or tenderness.
How many pellets will a brisket use in either?
Roughly 1 to 2 pounds per hour at brisket temperatures, so 12 to 25 pounds for a full cook — about one 20-pound bag per brisket in either brand. Consumption rises sharply in cold weather, since the grill runs harder to fight heat loss. Start with a full hopper and check it before you sleep; running dry mid-cook is a common overnight failure on both brands.
