Smoking a Brisket Overnight

The arithmetic of brisket forces this decision on almost everyone. A whole packer needs ten to fourteen hours plus a rest, and most people want to eat in the evening. That leaves two options: start before dawn, or cook through the night. The overnight cook is the more civilized of the two, and with the right smoker it is genuinely straightforward.
Can your smoker be left?
This is the whole question, and it is not about quality — it is about fuel autonomy.
Yes, comfortably: pellet grills, gravity-fed cabinets and electric smokers. All three hold a set temperature with a controller and will run as long as their fuel lasts. Check the published hopper burn time against your expected cook length — that number varies enormously between models and is the one to plan around.
Yes, with a full load: a bullet smoker. A full charcoal ring lit by the minion method typically runs eight to twelve hours at brisket temperatures, and the water pan makes the temperature genuinely stable. This is the traditional overnight setup and it works.
No: an offset. A stick burner needs fuel roughly hourly, and no amount of preparation changes that. If you own one, the right answer is a daylight cook finished early and held in a cooler until dinner — which is what most offset cooks do and which produces excellent results.
The setup that makes it uneventful
Do everything in daylight. Trim and season in the afternoon. Position the smoker where you can safely reach it in the dark, on a non-combustible surface, well clear of the house, fences and anything overhanging. Have a torch where you can find it.
Fill the fuel completely. This is the single most common overnight failure and the most avoidable. Fill the hopper to the top; fill the charcoal ring properly. Cold nights raise consumption sharply because the smoker works harder against heat loss, so a load that was ample in July may not be in November.
Run it for an hour before bed. Put the brisket on, watch the temperature settle, and confirm it is holding before you sleep. Most failures announce themselves in the first hour, and being awake for that hour turns a disaster into an adjustment.
Two probes, two alarms. A wireless probe in the meat and one clipped at grate level for the pit. Set a low-pit alarm around 200°F — this is the one that will actually save your cook, because it fires when the fire is dying. Set a meat alarm near 160°F so you know the stall is breaking. Check the alarm reaches your bedroom through the walls before you rely on it; range through building materials is the practical limitation of every wireless probe.
The food-safety picture, honestly
Overnight brisket makes people nervous because of the length of time involved. The science is reassuring. A brisket in a 250°F smoker climbs steadily and does not linger indefinitely in the danger zone, and long, low cooking delivers far more pathogen lethality than a simple temperature reading suggests — the USDA’s Appendix A exists precisely to describe that time-plus-temperature relationship. A brisket that cooks continuously to 200°F is not a food-safety question.
What is a food-safety question is an interrupted cook. If the fire goes out or the power fails and meat sits warm for hours in the 40-140°F range, you no longer have a slow cook — you have an incubator. Check the meat temperature the moment you discover a problem. If it dropped into that range for an unknown but long period, throw it away. It is a hard rule and an expensive one, and it is why the low-pit alarm is the alarm that matters.
On fire safety: smokers need clearance, and an unattended fire needs more of it than a supervised one. Keep it away from structures and combustibles, and never run a charcoal or gas smoker in a garage, under an overhang, or anywhere enclosed — carbon monoxide is odorless and this has killed people.
The morning
You should wake to a brisket somewhere in or just past the stall, with bark that has had all night to set. That is the ideal shape of an overnight cook: the slow, unattended, uneventful hours happen while you sleep, and the parts that require judgment — the wrap, the probe checks, the decision to pull — happen when you are awake.
Wrap when the bark is set and dark, then run to probe tenderness. If it finishes early, that is a good outcome rather than a problem: rest it and hold it. A brisket that spends three hours in a pre-warmed cooler is typically better than one sliced the moment it comes off.

Which smokers can be left unattended overnight?

What you cannot leave is an offset — it needs a split roughly hourly. If an offset is what you own, cook in daylight and hold the finished brisket instead.
What temperature should I run overnight?
250°F. It shortens the cook by hours compared with 225°F, produces brisket most people cannot distinguish, and reduces the length of the window in which something can go wrong unattended. It also gives you more margin against a hopper or charcoal load running out before the brisket is finished.
What alarms should I set?
Two. A low-temperature pit alarm, set around 200°F, which tells you the fire is dying or fuel has run out — this is the one that actually matters. And a meat alarm at roughly 160°F, so you know the stall is breaking and it is nearly time to wrap. Do not set a high-temperature meat alarm as a finish line: brisket is done by probe feel, not by a number.
What if the smoker goes out overnight?
Check the meat temperature immediately. If the brisket is still hot and the outage was brief, relight and continue. If the meat has dropped into the 40-140°F range and you do not know for how long — several hours, say — the safe call is to discard it. That is an expensive rule and it is the right one; this is exactly why a low-pit alarm on your phone is not optional.
Should I wrap the brisket before I go to bed?
Generally no. Bark forms during the unwrapped phase, and wrapping early costs you the crust. The usual overnight rhythm is to put the brisket on late, sleep through the bark-building hours, and wrap in the morning when it has set — which conveniently puts the wrap and the finish in daylight when you are awake to judge them.
