Most of the gear on this site involves trade-offs. Cheaper smokers give up steel and control; cheaper thermometers give up speed and accuracy. You generally get something for spending more.
Brisket knives are the clear exception, and it is worth understanding why, because it is not a fluke or a piece of contrarian positioning. The Victorinox Fibrox Pro 12-inch Granton slicer is what a great many working barbecue kitchens use, and the reasons are entirely legible from the specification.
What slicing brisket actually demands
Four things, and only four:
- Enough length to cross the flat in one pull. A whole packer is wide, and a slice cut in a single continuous stroke is cleaner than one sawed through in stages. Sawing tears fibers and drags moisture out of the cut face.
- A blade that does not stick. Brisket slices are hot, wet and fatty, and they will cling to a flat blade and tear as you lift it away.
- A handle that grips when greasy. You are handling a knife with rendered beef fat on your hands.
- A thin, flexible profile. A slicer follows a cut. It is not chopping anything.
That is the complete list. Notice what is missing: edge retention over months, exotic steel, balance for chopping, appearance. None of those change how a brisket slices.
How this knife meets all four
Twelve inches. The shortest length that reliably crosses a full packer flat in one stroke. Ten-inch slicers exist and they make you saw on a big brisket.
Granton edge. The scalloped hollows ground into both faces create small air pockets between the steel and the meat, breaking the suction that makes wet slices cling. On brisket this is a genuinely functional feature, not decoration — it is the difference between slices that fall away cleanly and slices that drag.
Fibrox handle. Textured, NSF-certified, and specifically designed to stay grippy when wet. It is plastic and it looks like it, and it does the job better than a beautiful wooden handle covered in beef fat.
Stamped blade.Here is the part that sounds like a downgrade and is not. Stamped blades are cut from rolled sheet rather than hammered from a billet, which makes them thinner, lighter and more flexible than forged blades. For a slicer those are precisely the properties you want — a thin flexible blade tracks the cut and meets less resistance. Forging matters for a heavy chef’s knife doing chopping work. A slicer does no chopping.
The honest compromise
There is one, and it is the softer steel. Victorinox uses a steel that is not as hard as premium Japanese knives, so the edge rolls sooner and needs honing more often.
In practice this is a reasonable trade rather than a real problem. Softer steel realigns easily on a honing steel and takes a new edge quickly on a stone — where a very hard blade holds its edge longer but is more brittle and much more work to bring back. For a knife that lives on hot, greasy meat and gets washed constantly, easy maintenance beats maximum retention. A few passes on a steel before each brisket is genuinely all it asks.
The other compromise is aesthetic. It is a plain-looking tool. If you want a knife that looks impressive on the board in front of guests, this is not it, and that is a legitimate thing to want — it is just not a performance argument.
What the expensive knives actually buy
Boutique brisket knives — Damascus cladding, hardwood handles, high-carbon Japanese steels — buy you materials, finish, edge retention and appearance. Those are real things and some people value them.
What they do not buy is a better slice of brisket. The blade is the same length, the Granton scallops work the same way, and the cut is decided by whether you found the grain, not by what the handle is made of. What you actually need alongside it
A twelve-inch blade needs a board it can travel across. A whole packer wants roughly a 24 by 18 inch surface to lie flat on, and a juice groove matters more on brisket than on any other cut — see best cutting board for brisket.
