Almost everything else on this site points in one direction: hold 250°F, manage your airflow, use a water pan for thermal mass, wrap when the bark sets, cook to probe tenderness. It is good advice and it is what most cookers are built around.
The Pit Barrel does close to none of it. One intake vent. No controller. No water pan. No grate under the meat — the brisket hangs from a stainless hook over the fire. It runs hot on purpose and offers you almost no way to change that.
And it makes very good brisket. That is worth sitting with, because it says something useful about how much of barbecue orthodoxy is essential and how much is one workable path among several.
The capacity argument
This is the clearest reason to own one. Pit Barrel states that two full packer briskets of 14 to 16 lb each hang simultaneously in an 18.5 inch barrel.
Consider what that means against a grate-based cooker. A whole packer is roughly twenty inches long, and fitting even one flat onto an 18-inch kettle grate is a real problem — it is the entire subject of the sizing section in brisket on a charcoal grill. The Pit Barrel sidesteps it by using vertical space instead of horizontal, and the result is that a cooker with a small footprint holds more brisket than smokers twice its size.
If you cook for crowds, that is not a marginal advantage. It is the whole product.
It runs hot, and you should let it
The single most common way people go wrong with this cooker is trying to make it behave like a bullet smoker. They damp the vent, chase 225°F, and end up with a choked fire producing the dirty smoke behind bitter brisket.
The Pit Barrel is designed to run hot. Set the vent per the instructions for your altitude, light the basket, hang the meat, and leave it. What you get is effectively a hot and fast cook — a packer that finishes in substantially less time than the twelve-to-fourteen hours a 250°F cook takes.
That is a legitimate way to cook brisket. Collagen conversion is a function of time and temperature together, and higher heat does in fewer hours what lower heat does in more. The real cost is a narrower margin: the lean flat dries faster at higher temperatures, so you have less slack between done and overdone. Probe early and often.
What you give up
Control. One vent, no thermal mass, no thermostat. If your cook is running hotter than you would like, your options are limited. People who enjoy dialing in a pit find this genuinely frustrating.
Overnight cooking. Not really the design. It is a fast cooker, which mostly removes the need — but if your plan was to start at 10pm and sleep, this is not the cooker for that. A gravity cabinet or an electric is.
Easy wrapping. A wrapped brisket does not hang well, so if you want to wrap you will be moving it onto the included grate partway through. Many Pit Barrel cooks simply do not wrap, which the short cook time makes viable — and which produces excellent bark, since nothing ever traps moisture against it. See wrapped vs unwrapped.
Comparable specs.Pit Barrel does not publish a cooking-area figure. They describe capacity by what fits rather than in square inches, which makes side-by-side comparison with grate smokers awkward. We print “Not published” rather than converting, because a hanging cooker’s capacity is genuinely not the same measurement and producing an equivalent number would be inventing one.
Who should buy it
Buy it if you cook a lot of meat in a small space, if you want charcoal smoke without learning fire management, if you like the idea of a cooker with essentially no settings, or if you are happy cooking hot and fast.
Do not buy it if you want to hold a precise low temperature, if overnight unattended cooking is the requirement, or if fiddling with a pit is part of the appeal — in which case a Weber Smokey Mountain gives you far more control at similar money, and the direct comparison is in WSM vs Pit Barrel.
