The Brisket Stall

Every brisket does this. You put it on, the temperature climbs steadily and reassuringly for five or six hours, and then it simply stops. It sits at 158°F. An hour passes. It is still at 158°F. You check the fire, which is fine. You check the thermometer against another one, which agrees. Dinner was supposed to be at seven.
This is the stall, and it is the single most alarming and most completely normal thing that happens during a brisket cook. Understanding it removes most of the anxiety, because once you know what is happening you know it will end.
What's actually happening
For years the stall was explained as fat rendering or collagen converting to gelatin — processes that absorb energy and were assumed to be soaking up the smoker’s heat. Both explanations are wrong, and the work documented by Meathead’s AmazingRibs.com, citing Greg Blonder’s experiments, showed why: the stall is evaporative cooling.
As the brisket heats, moisture inside it migrates to the surface and evaporates. Phase change from liquid to vapor absorbs a large amount of energy — this is exactly why sweating cools you down, and why a wet towel on your neck works on a hot day. The brisket is, in effect, sweating.
Around 150-170°F, the rate of energy leaving via evaporation roughly matches the rate of energy arriving from the smoker. The two balance. The internal temperature stops rising, not because heat has stopped going in, but because just as much is going out. The stall ends when the surface finally dries enough that evaporation slows, and the balance tips back.
The decisive evidence: a brisket sealed in foil — where evaporation cannot occur — barely stalls at all, while an identical brisket left open stalls for hours. If rendering fat or converting collagen were the cause, both would stall equally, because both undergo the same chemistry.

Wrapping is the standard answer because it attacks the mechanism directly: enclose the brisket and you dramatically reduce evaporation from its surface, which removes the cooling that caused the stall. Raising the pit temperatureworks by brute force — put in more heat than evaporation can remove. It is effective and it costs you a little tenderness, since a faster cook renders fat and converts collagen less gently.
Riding it out means accepting the extra hours. You get the best bark available, because nothing is softening it and smoke continues depositing throughout. Plenty of celebrated Texas brisket is cooked this way. It also produces a drier flat, because the evaporation that causes the stall is, by definition, moisture leaving your brisket. And if you are spritzing while you wait, be clear about what that does: putting more moisture on the surface to evaporate makes the stall deeper, not shorter.
When to wrap: bark, not temperature
The common advice is to wrap at 165°F, and it is a reasonable approximation. But the temperature is a proxy for the thing that actually matters, which is whether the bark has set.
Press the surface. If it is dark, dry to the touch and does not smear or lift under your finger, the bark is set and you can wrap without ruining it. If it is still tacky and moves when you press, wrapping now will seal in a soft surface that never fully recovers — the most common wrapping mistake. Wait, even if that means waiting past 165°F.
There is a second reason to wait: wrapping ends smoke deposition. Once the brisket is enclosed, no more smoke reaches it. If you are running a pellet grill and already fighting for smoke flavor, wrapping later is one of the few levers you have.
Planning around it
The practical consequence of the stall is that brisket cannot be scheduled precisely. Two identical briskets on the same smoker on the same day can finish two hours apart, because their stalls differed in length. Any per-pound estimate is a planning aid, not a promise.
The solution every experienced cook uses is to build in slack: start early enough that you expect to finish two or three hours before you need to serve, then use the rest and hold to absorb the difference. A finished brisket wrapped in towels in a pre-warmed cooler will hold safely for hours, and resting improves it. A brisket that is not ready when guests arrive cannot be hurried. Can you push through the stall without wrapping?
Yes, and many Texas pits do exactly that — it is sometimes called riding it out or cooking naked. You get the best possible bark, because nothing is softening it and smoke keeps depositing throughout. The costs are hours of additional cook time and a drier flat, since evaporation continues the whole time. It is a legitimate choice if you have the time and prioritize bark.
Does the stall happen at the same temperature every time?

Treat the range as a guide to when to start paying attention rather than as a number to plan around.
Is a second stall normal?
It happens and it is not a problem. Some cooks see the temperature climb after the first stall, then plateau again briefly at a higher point. It is usually the same evaporative mechanism reasserting itself as conditions shift, or an artifact of probe placement. If the brisket is wrapped and the pit is holding steady, keep going — the answer is patience rather than intervention.
