The spec that actually decides it
Not accuracy — both are accurate well within what brisket requires, which is not much, since brisket is done by feel rather than by a number. Not features, mostly. The spec that decides a brisket probe is whether the alert reaches you where you sleep.
Think about the actual scenario. Brisket goes on at 9 p.m. The stall arrives somewhere around 2 a.m. and breaks at an unpredictable hour. The entire value proposition is that you sleep and the probe wakes you. Do truly wireless probes actually work through a metal smoker?
Yes, but with reduced range. A small transmitter buried inside a large piece of meat inside a metal box is a genuinely difficult radio environment, and quoted ranges are line-of-sight in open air rather than through steel and walls. Expect a substantial fraction of the advertised figure. Both brands sell repeaters or booster blocks precisely because this is the category's main weakness.
Will the battery last a full brisket cook?
Both are specified to cover a long cook, but start every brisket with a fully charged probe rather than assuming. Battery performance degrades in the cold and with age, and a probe dying in hour nine of a twelve-hour overnight cook defeats the purpose entirely. Charge the block as well — it powers the radio link that actually delivers your alert.
Can I use a wireless probe for pit temperature too?
Partly. Both designs read ambient temperature from the external end of the probe, so you get a pit reading from the same device — but it is measured right at the meat's surface, which is not the same as grate temperature elsewhere in the cooker. It is useful as a sanity check. If you want proper pit monitoring, a dedicated grate clip probe on a separate unit is more reliable.
How deep should the probe go into a brisket?
Into the thickest part of the flat, inserted from the side, with the sensing tip in the center of the muscle — and no deeper than the marked safe-insertion line. That line exists because the ambient sensor at the other end must stay outside the meat to read pit temperature. Avoid the fat seam between the point and the flat; it reads several degrees off because rendered fat behaves differently from muscle.
Do I still need an instant-read thermometer?
Yes. A leave-in probe tells you the trend at one fixed spot; it cannot tell you whether the thin end of the flat and the point are both done, and on a packer those routinely finish at different moments. An instant-read lets you check six spots in seconds at the end of the cook. The two tools are complementary, and brisket is the cut that most needs both.
