The standards every page on this site is held to — how we research and source, how we stay independent, how we update and correct, and the lines we won't cross.

How we research and source

Every factual claim about cooking a brisket — a safe internal temperature, a doneness target, why the stall happens — is tied to a published source, such as USDA FSIS or a recognized field authority, and cited on the page. Gear facts (cook-chamber size, temperature range, probe accuracy, blade length, paper width) are read from the manufacturer’s own listing on a dated visit. We do not assert numbers on our own authority, and we do not present a maker’s marketing copy as fact. Our full evaluation process is spelled out on the methodology page.

No fabricated proof, ever

Brisket & Bark contains no invented reviews, testimonials, star ratings, or before-and-after photos. We have not physically tested the smokers, thermometers, wood, paper, or knives we write about, and we never imply otherwise. We publish no aggregate ratings, because we ran no test to average. Product images come from the retailer; verdicts are our own analysis of the published specs. This is the single line we will not cross for any layout, any partner, or any reason.

Independence from manufacturers

We earn affiliate commissions, disclosed on our affiliate disclosurepage. Those commissions never influence a recommendation, and no manufacturer pays for a placement, a ranking, or a kinder verdict. Our advice is buyer-first, not commission-first: when the product that pays us less is the better buy for a brisket cook, it is our pick. We do not sell reviews, rankings, or “sponsored” slots disguised as editorial.

Honesty about limits

The author is a brisket enthusiast, not a competition cook, and this site is not a substitute for food-safety guidance. We say so plainly. Where a maker hides a figure, we print “Not published” rather than estimate it. Where a product doesn’t hold up for a long low-and-slow cook, we say so and tell you to skip it. We compete on a transparent, reproducible method — not on borrowed credentials.

Corrections

We get things wrong sometimes, and we’d rather fix them in the open than quietly. If you find a factual error, tell us: we check the claim against its source, and if you’re right, we correct it and update the page’s “last updated” date. Substantive corrections to a live claim are noted rather than hidden.

Updates

Gear gets revised, models get discontinued, and prices move. We review our roundups on a roughly quarterly cadence and carry “Updated 2026” dates so you can see how current a guide is. Prices are refreshed automatically and stamped with the date they were pulled; when a live price isn’t available, the page shows “Check price” rather than a stale number.

Reader safety

We follow published food-safety guidance: confirm doneness with a thermometer rather than the clock, keep raw beef out of the danger zone, and rest and hold brisket safely. For anything beyond general cooking guidance — a specific health question, an allergy, or a food-safety concern — we point readers to the appropriate authority rather than pretending to substitute for one.
