The Highland is the smoker a great many people mean when they say “I got an offset.” It sits at the price point where a real horizontal offset stops being aspirational, it comes from a brand with genuine barbecue heritage, and the reverse-flow version fixes the single most common complaint about affordable offsets: that one end of the chamber cooks far hotter than the other.

What the reverse-flow design fixes
A conventional offset draws heat and smoke from the firebox straight across the cooking chamber to a stack at the opposite end. The consequence is unavoidable: the end nearest the fire is hotter than the end furthest from it, often dramatically so on inexpensive pits. Cooks work around it by rotating the meat every couple of hours, which means opening the lid, which means losing heat.
Reverse flow routes the hot gases underneath a run of steel baffle plates to the far end first, then lets them travel back across the top of the food to a stack mounted at the firebox end. The food therefore sits above a heated steel plate along its whole length, and the temperature difference end to end drops substantially. Those plates also catch drips and add thermal mass, both of which help.
On the Highland the baffles are removable, and the stack can be relocated, which lets you run it as a conventional offset once you have the fire figured out. That is a genuinely thoughtful piece of design at this price: it makes the smoker easier at the start and more flexible later.
What thin steel still costs you
Oklahoma Joe’s does not publish a steel gauge figure for the Highland, and we won’t invent one. What can be said with confidence is that every offset in this price class is built from steel far thinner than a custom pit, and the consequences are consistent across the category.
It responds fast to the fire. Add a split and the temperature climbs promptly; let the fire die down and it falls just as promptly. Heavy steel buffers both; thin steel does not. In practice this means a fire tended roughly hourly, and a genuine struggle on a cold or windy day. Many owners build or buy a windbreak, and it helps considerably.
It leaks. Doors and lids on mass-produced offsets do not seal tightly. Uncontrolled air means you cannot fully damp the fire down when you want to, which is precisely the control an offset is supposed to give you. High-temperature gasket tape around the cook chamber lid and the firebox door is a few dollars and is the single most valuable modification you can make.
The dome gauge is decorative. It reads air temperature near the top of the lid, which is not where the brisket sits, and inexpensive bimetal gauges are commonly inaccurate besides. Run a probe at grate level. This is not Highland-specific advice; it applies to essentially every smoker with a factory dome thermometer.
Running a brisket on it
Start the fire small and let it establish properly. The most common failure on any offset is loading too much wood too early, which smothers combustion and produces the thick white smoke that makes brisket taste bitter. You want a small, hot, clean fire producing barely-visible smoke — our fire management guide covers this in detail, and it matters more on this smoker than the smoker itself does.
Put the brisket point-end toward the firebox. Even with reverse flow there is some gradient, and the point is fattier and more forgiving of extra heat than the flat, which is the part that dries out. Expect to add a split every 45 to 60 minutes and to check your grate-level probe each time.
Because you cannot leave this smoker overnight, plan a daytime cook and use the hold. A brisket finished at four in the afternoon and held in a pre-warmed cooler until seven is better than one rushed to hit a deadline, and it turns the offset’s biggest scheduling weakness into a non-issue.
Who should buy it
Buy the Highland if you want to learn fire, if the participation is part of the appeal, and if you accept that your results will improve markedly over your first half-dozen cooks as your technique does. It is one of the least expensive ways to get genuine offset flavor, and the reverse-flow design removes the worst structural handicap of cheap offsets.
Look elsewhere if you need to sleep through the cook, if brisket is a once-a-summer event rather than a hobby, or if your realistic alternative is not cooking at all. A pellet grill or a gravity cabinet will produce a very good brisket while you are asleep, and a very good brisket you actually cooked beats a theoretically better one you never got round to.
