Is My Brisket Spoiled?
Two of the three things that alarm people about a fresh brisket are completely normal properties of vacuum packaging. The third is not. Here is how to tell them apart, and the one rule that overrides all of it.
You have opened a cryovac packer and something is wrong. It smells sour. It looks brown rather than red. The date on the label was last Tuesday.
Two of those three are almost certainly nothing. One of them might be. And there is a fourth sign, less often mentioned, that matters more than all of them.
Before anything else: this page is general food-safety information based on USDA guidance, not a substitute for your own judgment. Meat you are genuinely unsure about should be discarded. A brisket is not worth the risk.
The sour smell: usually the bag
This is the single most common false alarm in brisket cooking, and it catches almost everyone the first time.
A cryovac brisket has been wet-aging — sitting sealed in its own juices, with essentially no oxygen, for anywhere from days to weeks. That environment favors lactic-acid bacteria, which are harmless and which produce a sour, tangy, faintly sulfurous smell.
Sealed in the bag, that smell concentrates. Cut the bag open and it comes out all at once, which is exactly when you are most primed to interpret it as spoilage.
The test. Rinse the brisket under cold running water, pat it thoroughly dry with paper towels, and leave it in open air for fifteen to twenty minutes.
If the smell fades to ordinary raw beef, it was the packaging and the meat is fine. If it is still there — or worse, if it has developed into something ammoniac or sweetly rotten — that is a different signal entirely.
The brown or gray color: usually the bag as well
Fresh beef is bright red because myoglobin in the muscle reacts with oxygen to form oxymyoglobin. It is an oxygen effect, not a freshness effect.
A vacuum bag contains no oxygen. So the meat inside reverts to its deoxygenated color, which is a dull purplish-brown, and it looks exactly as alarming as it sounds.
Open the bag, and the surface typically blooms back to red within twenty to thirty minutes as it meets air.
What would concern us is not brown but green, or iridescent patches with a slimy sheen, or distinct fuzzy growth. Uniform brown on a vacuum-packed brisket is routine.
The sign that actually matters: texture
This is the one to trust, and it is mentioned far less often than smell or color.
A vacuum-packed brisket is wet when it comes out and will feel slippery. That is purge — the liquid the meat released during aging — and it rinses away.
What should not happen is a sticky, tacky, ropy film that comes back after rinsing. That texture is bacterial growth on the surface, and it is the most reliable spoilage indicator available to a home cook.
Rinse, dry, and touch it. Clean and firm is fine. Persistently tacky is not.
The dates, and what they actually mean
A sell-by date is an instruction to the retailer about stock rotation. It is not a safety deadline and it is not addressed to you.
A use-by date is a quality estimate from the manufacturer, assuming proper storage throughout.
Vacuum-packed beef held consistently below 40°F commonly remains good well past a sell-by date, which is why wet-aging works at all.
What matters far more than the printed date is the storage history: whether the cold chain held, and whether the bag is intact. A punctured or leaking vacuum bag has let oxygen and contaminants in and voids the whole logic of the packaging — treat that brisket as ordinary fresh meat with a much shorter window, regardless of the date.

The rule that overrides everything: time and temperature
None of the above matters if the brisket has been mishandled, because the most dangerous contamination is not something you can see or smell.
The USDA danger zone is 40°F to 140°F. Bacteria multiply fastest in that range, and the working guidance is that food should not spend more than two hours in it — one hour if the ambient temperature is above 90°F.
So a brisket left on a counter to thaw overnight is a problem even if it smells fine, because the exterior spent hours in the danger zone while the interior was still frozen. That is precisely why thawing a brisket properly has its own page.
Cooking does not undo this. High temperatures kill bacteria, but some bacteria produce heat-stable toxins as they multiply, and those survive a twelve-hour smoke perfectly well. “I will just cook it longer” is not a food-safety strategy.
A note on the long low cook itself
People sometimes worry that brisket spends too long below 140°F during the cook to be safe. The USDA addresses this directly in its lethality guidance: what matters is the total time at temperature, not just the peak, and a brisket climbing steadily through the range accumulates more than enough lethality on the way.

The short version
Sour out of the bag, fades after twenty minutes in air: normal. Cook it.
Brown or purplish, blooms red in air: normal. Cook it.
Sticky film after rinsing, or a smell that does not fade: throw it away.
Left in the danger zone for hours, however it looks: throw it away.
And if you are standing there genuinely unsure after all of that — throw it away. A packer costs what it costs. It is a poor trade against making people ill.

Why does my brisket smell sour when I open the cryovac?
Almost always because it is vacuum-packed. What does a genuinely spoiled brisket smell like?
Not sour but putrid — ammonia, rot, or a sweet-sickly note that gets stronger rather than fading in fresh air. The key distinction is that packaging sourness dissipates within twenty minutes of opening the bag, while spoilage does not. If the smell is still unpleasant after rinsing and airing, or if it makes you recoil rather than merely wrinkle your nose, discard it.
Is a slimy brisket spoiled?
A sticky or slimy film that persists after rinsing is the most reliable spoilage sign there is, and it should not be ignored. Vacuum-packed beef is wet and can feel slippery straight out of the bag, which is normal — but that washes off. A tacky, ropy film that returns after rinsing is bacterial growth. Combined with an off smell it is conclusive: throw it away.
Can I cook a brisket past its sell-by date?
A sell-by date is a stock-rotation instruction for the retailer, not a safety deadline, and vacuum-packed beef held consistently below 40°F commonly stays good well past it. Does smoking a brisket kill bacteria that were already there?
Cooking to a safe internal temperature kills the bacteria, but it does not remove the toxins some bacteria produce as they multiply — and those toxins are heat-stable. That is why spoiled meat cannot be rescued by cooking it thoroughly, and why the USDA danger-zone rules exist for raw storage rather than only for cooking. If a brisket is genuinely spoiled, smoking it for twelve hours does not make it safe.
