Why Is My Brisket Dry?
Here is the counter-intuitive part: an underdone brisket eats drier than a properly finished one, even though it lost less moisture. Which means most attempts to add moisture are solving the wrong problem.

“Dry” is the most misleading word in barbecue, because what people are usually describing is not a shortage of water. Brisket is perceived as moist when its connective tissue has converted to gelatin and its intramuscular fat has rendered — those two things coat the muscle fibers and lubricate every bite. A brisket that still contains plenty of water but has not rendered will taste dry. A brisket that lost more water but rendered fully will taste juicy.
Get that the wrong way round and you end up injecting, spritzing, foil-wrapping and water-panning your way toward a brisket that is still dry — because none of that addresses rendering.
The five causes, ranked
1. It was underdone. The single most common cause, and the one people least expect. If the flat resisted the probe when you pulled it, the collagen had not finished converting, and the brisket will eat dry however much moisture it retained. The remedy is to probe for no resistance rather than pulling at a number, which usually lands somewhere between 195 and 210°F depending on the individual brisket. 2. It was not rested, or not rested long enough. Slicing immediately after the cook dumps juice onto the board and gives carryover no chance to finish its work. An hour is the minimum; two to four hours held in a pre-warmed cooler is genuinely better and is what most good barbecue joints do. This is the highest-return change most people can make.
3. The pit ran hotter than you thought. Higher temperatures drive surface evaporation faster, and the flat pays for it first. The trouble is that factory dome thermometers read air near the lid and are frequently inaccurate, so a pit you believed was at 250°F may have spent hours at 300°F. Verify with a probe at grate level before you conclude anything else.
4. You cooked a flat rather than a whole packer. A trimmed flat has less fat, less mass and no fatty point shielding it. It is a legitimate cut and a much less forgiving one. If the same technique keeps producing dry brisket, try a whole packer before you change the technique.
5. You over-trimmed. Taking the fat cap down to nothing removes the buffer that protects the flat from direct heat and gives up the fat that renders down into the meat. A quarter inch is the standard for a reason — see trimming a brisket.
The things people try that don’t work
Spritzing every twenty minutes. Each lid opening costs heat and lengthens the cook. Surface moisture evaporates again almost immediately and does not enter the meat. Spritzing helps a little with bark color and smoke adhesion early on; it is not a moisture strategy.
A water pan alone. Humidity in the chamber does slow surface drying, and it is genuinely useful in a bullet smoker. But it does not put moisture into the meat, and it will not rescue a brisket pulled early.
Injecting to fix a technique problem. Injection has real uses on lean briskets and fast cooks. Using it to compensate for pulling early or skipping the rest just makes a dry brisket that also tastes salty.
Cooking lower and longer. Counter-intuitively, this can make things worse: more hours in the smoker means more total evaporation from the surface. What matters is finishing properly, not finishing slowly.
What actually protects a flat
Wrap once the bark has set. A wrap stops evaporative cooling and evaporative drying at the same time. Butcher paper is the standard compromise — it slows moisture loss enough to protect the flat while letting enough escape that bark survives. Foil protects moisture more and costs you more crust; the comparison lays out the trade.
Add tallow at the wrap. Spooning rendered beef tallow over the brisket before closing the paper is the simplest way to add fat where the flat needs it, and it requires no syringe. This is standard practice in a number of well-known pits.
Rest long, hold warm. The rest is where a good brisket becomes a great one. Wrapped, above 140°F, for hours if you can.
Slice thin, slice across, slice to order. Cut slices about the thickness of a pencil, across the grain of each muscle separately, and only cut what is about to be eaten. Sliced brisket dries on the board faster than anything else you will do to it.
Frequently asked questions
Why did my brisket come out dry?
The most common reason is that it was underdone rather than overdone. Brisket eats moist when its fat and collagen have rendered into gelatin, and a brisket pulled before that has happened tastes dry despite having lost less water. Other frequent causes are not resting it, slicing it too early or too thick, cooking a lean flat rather than a whole packer, and a pit running considerably hotter than the gauge claimed.
Does wrapping stop brisket drying out?
It helps considerably. Wrapping slows evaporative moisture loss from the surface and shortens the cook, both of which protect the flat. Foil protects moisture most and softens bark most; butcher paper is the usual compromise. What wrapping cannot do is compensate for pulling the brisket at the wrong moment, which is the more common cause of dryness.
Should I inject a brisket to keep it moist?
Only if you have a specific reason — a lean Select brisket, a thin flat, or a hot and fast cook. Injection adds liquid and salt to the interior, which genuinely helps in those cases. It is not a fix for a brisket that came off early or was not rested, and treating it as one is how people end up with brisket that is both injected and dry.
Is a dry brisket overcooked?
Sometimes, but less often than people assume. A genuinely overcooked brisket is dry and crumbly and falls apart when sliced. An undercooked brisket is dry in a different way — firm, chewy and lacking the gelatinous richness that makes brisket feel moist. Check the texture: if it fell apart, it went too far; if it resisted the knife, it needed more time.
Why is only the flat dry?
Because the flat is the lean muscle and the point is the fatty one — that difference is inherent to the cut. The flat has less intramuscular fat to render, sits thinner so it heats faster, and dries out sooner. Leaving a slightly thicker fat cap on the flat side, wrapping once the bark sets, and cooking a whole packer rather than a trimmed flat all reduce the gap.
Does slicing affect how dry brisket tastes?
Substantially. Slices cut too thick or cut with the grain require more chewing, which reads as dry even when the meat is perfectly cooked. Slices also lose moisture quickly once cut, which is why barbecue restaurants slice to order. Slice about the thickness of a pencil, across the grain, and only slice what you are about to serve.
