Is Brisket Done at 200°F?

The short answer: maybe. 200°F is comfortably inside the window where briskets finish, so the question is reasonable. But if you are standing at the smoker with a probe reading 200°F and wondering whether to pull, the temperature is not the information you need.

Why there's no single done temperature

Most cooking temperatures are about safety or protein denaturation, and those happen at reliable points — which is why a steak at 130°F is medium-rare every time. Brisket is different, because what makes brisket good is not a temperature event but a time-and-temperature process.

Brisket is dense with collagen, the connective tissue that makes the raw cut tough. Long cooking converts that collagen into gelatin, which is what gives properly cooked brisket its succulent, yielding texture. That conversion accelerates with heat but it also takes time — hours spent in the range, not merely arrival at a number.

Which is why two briskets can read 200°F and be in completely different states. One cooked gently over fourteen hours may have finished converting and be perfect. One pushed hard over eight hours may have hit the same number with plenty of collagen intact and still be tough. The thermometer cannot distinguish between them. USDA’s own guidance on doneness versus safety makes the same distinction — safe and tender are separate questions, and for tough cuts tenderness arrives long after safety does.

The test that actually works

Probe tenderness. Take a thermometer probe or a thin metal skewer and push it into the thickest part of the flat, entering from the side. Pay attention to what your hand feels rather than what the display says.

When a brisket is ready, the probe slides in and out with almost no resistance. The standard description is “like pushing into room-temperature butter,” and it is accurate — there is a distinct, unmistakable quality to it once you have felt it. When a brisket is not ready, you feel the probe pushing through something. It is firm. It resists.

Check several places, because a packer is two muscles that do not always finish together: the thick end of the flat, the thin end, and the point separately. The flat is the one that matters most, since it is the leanest and least forgiving. This is where a fast instant-read penearns its place — you can check six spots and close the lid before a slow thermometer has settled twice.

So what do I do at 200°F?

Probe it.If it slides in like butter across the flat, pull it — 200°F is a perfectly normal finishing temperature and there is no benefit to cooking further once tender.

If it resists, put it back on.Wrapped, same pit temperature, and check again in thirty to forty-five minutes. Nothing has gone wrong; this brisket simply needs more time in the range. Briskets routinely finish at 205°F, 208°F, and occasionally higher.

Do not panic about the number climbing.The fear that pushing past 203°F will ruin a brisket is largely unfounded. Overcooking is possible — far enough past tenderness the fibers break down into something mushy and crumbly — but the margin is generous, and under-cooking is by a wide margin the more common failure.

Where 203°F came from

The famous number is a useful average that hardened into a rule. Enough briskets finish near 203°F that it became shorthand, and as shorthand it is fine — a reasonable place to start checking.

It becomes harmful when treated as a target to cook to. Set an alarm at 203°F, pull when it sounds, and roughly some proportion of the time you will pull a brisket that was not ready. One more variable: the rest

Doneness does not stop at the moment you pull. Carryover cooking adds a few more degrees as heat migrates inward, and more importantly the restis where texture settles — juices redistribute, the meat relaxes, and a brisket that seemed borderline can come out noticeably better after an hour or more.

A brisket pulled at genuine probe tenderness and then rested properly will be better than one pulled at a perfect number and sliced immediately. The rest is not optional and it is not merely a holding step — it is the last part of the cook.
